Some sweets for Christmas

The pumpkin pies were made the cheater way- a can. :)

Pecan chocolate chip pie
2T butter
1/2c sugar
2 eggs
2T flour (self rising)
1/4t salt
1/2t vanilla
1c corn syrup (I used light)
1 1/2c pecans
1/2c chocolate chips

Cream butter and sugar, then add remaining ingredients. Pour into pie shell; bake 10 mins at 450 degrees and then 25 mins at 350 degrees.


Baked banana pudding-
3/4c sugar
1/3c all-purpose flour
dash of salt
4 eggs, separated, room temperature
2c milk
1/2t vanilla
wafers
5-6 fully ripe bananas, sliced

Mix 1/2c sugar, flour and salt. Stir in 4 yolks and milk; blend well. Cook over medium high heat, stirring constantly, until thickened. Reduce heat and cook, stirring occasionally, an additional 5 mins. Remove from heat; add vanilla.
Now it's time for your layers: pudding, wafers, bananas, repeat.
Beat egg whites until stiff but not dry; gradually add remaining 1/4c sugar and beat until stiff peaks form.
Bake at 425 degrees for 5 minutes or until lightly browned. (I think mine is a bit too dark.)
