Deep Pink Ecstasy




I kid you not, that's really what the recipe is called. Well, actually, it's called Bee Taylor's Deep Pink Ecstasy. It's from the Aunt Bee's Delightful Desserts cookbook. It is listed in the cake section.
I'm not entirely sure mine turned out correctly as it looks more like a cobbler and less like a cake. Also, mine isn't actually pink. Either way, here's the recipe.

1T butter
1/2c sugar
1c flour
1t baking powder
1/2c milk
1/2t vanilla extract

1 can pie cherries
1c sugar
1/2t salt
1T lemon juice
2T cornstarch (to thicken)

Cream butter with 1/2c sugar. Sift flour with baking powder and add alternatively to creamed mixture with milk. Add vanilla. Place in a greased 8x8 inch pan.

Mix cherries, 1c sugar, salt, lemon juice, and cornstarch. Pour cherry mixture on top of batter.

Bake for 45 mins at 375 degrees. Serve plain or with whipped cream.
Serves 8 to 10.

By the way- Did you notice the freaking cute Santa mug hanging in the picture? I found that little guy this year and I believe he will spark a collection. Would you believe I paid only twenty cents for him?
